      Instructions
      1. Finely chop the Coriander then, mix together the sour cream, mayonnaise, coriander, garlic clove, chipotle rub and lime juice and set aside.
      2. Cook the corn on the BBQ or griddle if you’re not using a BBQ until cooked through and nicely charred, transfer to a plate.
      3. Using a spoon or brush coat each cob with the mixture and sprinkle over the feta cheese, serve immediately with a generous squeeze of lime
