BBQ Chipotle & Honey Chicken Tacos
This is the perfect meal for busy evenings, I like to poach my chicken for shredding, it makes it easier to shred and it stays nice and moist. I’ve always got a bag of pre shredded in the freezer ready to grab and defrost when I’m in a hurry. The Smokey flavour of the sauce works really well with the honey, it also makes a fab glaze for barbecuing.

- 2 Chicken Breasts
- 2 Tbsp Honey
- 3 Tbsp Smokey Chipotle BBQ Sauce
- Small Can Black Beans
- Small Can Sweetcorn
- 40 g Feta Cheese
- 6 Small Tortillas
- Salsa
- Fresh Coriander
- Limes
Gently heat the honey and Smokey Chipotle BBQ sauce stirring continuously
Add the chicken and stir well until it’s all evenly coated
Generously fill your tortillas with the chicken and top with the beans, sweetcorn, feta cheese, salsa and coriander with a good squeeze of lime juice
