Mexican Street Corn
Mexican street corn or Elotes is a very popular street food in Mexico. It’s tangy, and creamy with a hint of spice, the corn is best cooked on a BBQ for that delicious charred flavour.
- 4 ears Sweet Corn
- 4 Tbsp Mexican Sour Cream
- 4 Tbsp mayonnaise
- 1 handful coriander
- 1 clove garlic
- 1 Tbsp Smokey Chipotle BBQ Rub
- 1 Tbsp Lime Juice
- 60 g Feta Cheese
- Lime Wedges
Finely chop the Coriander then, mix together the sour cream, mayonnaise, coriander, garlic clove, chipotle rub and lime juice and set aside.
Cook the corn on the BBQ or griddle if you’re not using a BBQ until cooked through and nicely charred, transfer to a plate.
Using a spoon or brush coat each cob with the mixture and sprinkle over the feta cheese, serve immediately with a generous squeeze of lime
