BBQ Chipotle & Honey Chicken Tacos

This is the perfect meal for busy evenings, I like to poach my chicken for shredding, it makes it easier to shred and it stays nice and moist. I’ve always got a bag of pre shredded in the freezer ready to grab and defrost when I’m in a hurry. The Smokey flavour of the sauce works really well with the honey, it also makes a fab glaze for barbecuing.

  • 2 Chicken Breasts
  • 2 Tbsp Honey
  • 3 Tbsp Smokey Chipotle BBQ Sauce
  • Small Can Black Beans
  • Small Can Sweetcorn
  • 40 g Feta Cheese
  • 6 Small Tortillas
  • Salsa
  • Fresh Coriander
  • Limes


  • Gently heat the honey and Smokey Chipotle BBQ sauce stirring continuously
  • Add the chicken and stir well until it’s all evenly coated
  • Generously fill your tortillas with the chicken and top with the beans, sweetcorn, feta cheese, salsa and coriander with a good squeeze of lime juice
