Mexican Street Corn

Mexican street corn or Elotes is a very popular street food in Mexico. It’s tangy, and creamy with a hint of spice, the corn is best cooked on a BBQ for that delicious charred flavour.

Ingredients
  

  • 4 ears Sweet Corn
  • 4 Tbsp Mexican Sour Cream
  • 4 Tbsp mayonnaise
  • 1 handful coriander
  • 1 clove garlic
  • 1 Tbsp Smokey Chipotle BBQ Rub
  • 1 Tbsp Lime Juice
  • 60 g Feta Cheese
  • Lime Wedges

Instructions
 

  • Finely chop the Coriander then, mix together the sour cream, mayonnaise, coriander, garlic clove, chipotle rub and lime juice and set aside.
  • Cook the corn on the BBQ or griddle if you’re not using a BBQ until cooked through and nicely charred, transfer to a plate.
  • Using a spoon or brush coat each cob with the mixture and sprinkle over the feta cheese, serve immediately with a generous squeeze of lime
