Mexican Street Corn
Mexican street corn or Elotes is a very popular street food in Mexico. It’s tangy, and creamy with a hint of spice, the corn is best cooked on a BBQ for that delicious charred flavour.
Ingredients
- 4 ears Sweet Corn
- 4 Tbsp Mexican Sour Cream
- 4 Tbsp mayonnaise
- 1 handful coriander
- 1 clove garlic
- 1 Tbsp Smokey Chipotle BBQ Rub
- 1 Tbsp Lime Juice
- 60 g Feta Cheese
- Lime Wedges
Instructions
- Finely chop the Coriander then, mix together the sour cream, mayonnaise, coriander, garlic clove, chipotle rub and lime juice and set aside.
- Cook the corn on the BBQ or griddle if you’re not using a BBQ until cooked through and nicely charred, transfer to a plate.
- Using a spoon or brush coat each cob with the mixture and sprinkle over the feta cheese, serve immediately with a generous squeeze of lime
